Imperial
Star
This
is our personal favourite artichoke at the moment. It's very tender
and there is a large amount of "meat" at the base of the
leaf. Imperial Star artichokes are green with some purple tinting.
and they're thornless so easy to pick... and eat! They're also quite
large so just one or two make an excellent, filling snack.
Imperial
Star artichokes were first grown in California in 1991, and were
bred to produce a crop in a single season. This is very convenient
for the BC climate as artichokes do not survive the winter well.
Green
Globe
Green
Globe is one of the most popular artichokes available. This is the
variety produced by the Pezzini Farm in Castorville, California,
and it's the type found in most local grocery stores. These artichokes
are generally green with a slight purple colouring. If you've ever
had an artichoke this is most likely the one you've tried.
Emerald
Emeralds
are very similar to the Imperial Star variety -- very tasty with
a lot of "meat." They tend to resemble the Green Globe
artichoke in shape and colour. They were developed in 1998 to grow
in both costal and inland valley regions of California. This variety
does produce some thorns, so the tips of the artichoke should generally
be cut off before cooking.

Kiss
of Burgundy
This
is a gorgeous plant! So much so that it's a shame to pick them,
but they do taste good! The Kiss of Burgundy can have a light smattering
of purple/burgundy on the artichoke or the whole thing can be a
deep dark burgundy.
The
flavour is more nutty or woody then the regular varieties. It's
really quite the treat to eat one of these gorgeous artichokes!
